Grilled Peach & Arugula Salad

Ingredients
4 peaches - cut in half, pitted and grilled
1 (5 oz.) package Olivia’s Organics Baby Arugula
½ cup shelled and chopped pistachios
½ cup crumbled feta
Handful of chopped mint
2 tablespoons organic honey
Zest of one organic lemon
1 tablespoon fresh lemon juice
â…“ cup extra virgin olive oil
Salt and pepper to taste
Directions
1) Cut the grilled peaches into slices.
2) Arrange the arugula on a platter and top with the peaches, pistachios, feta and mint.
3) Add all dressing ingredients into a covered jar and shake well.
4) Drizzle some of the dressing over the salad and serve.
